Okay, so I’m not sure if i’m taking creative license a bit by calling these ‘pop tart’ bites, since the puff pastry gives up lovely, flaky puffed up pastry – BUT my idea behind the recipe was always pop tarts but I really love puff-pastry ( and I always found the pastry the worst element of pop tarts so why no change it up a bit?!). Filled with delicious, tangy blood orange jam and topped with a coconut & lime icing, these blood orange puff pastry ‘pop tart’ bites are a delicious, super simple vegan treat.
